This fresh, lively update on a meat loaf has fantastic flavor and beautiful green flecks

Ingredients

Loaf:
1 cup regular oats
2/3 cup milk
1 teaspoon olive oil
1 (12-ounce) bag Cut `n Clean Greens Swiss Chard
1 1/4 pounds (20 ounces) lean ground turkey (7% fat)
1/2 cup chopped fresh cilantro
2 tablespoons dried minced onion (or 1/3 cup chopped fresh onion)
4 garlic cloves, finely minced
1 tablespoon packed brown sugar
1 tablespoon finely minced fresh ginger
1 teaspoon soy sauce
1 teaspoon Asian fish sauce
1 teaspoon sesame oil
1/2 teaspoons salt
1/4 teaspoon freshly ground pepper
1 egg

Sauce:
2 tablespoons prepared hoisin sauce
2 tablespoons prepared plum sauce
1 tablespoon packed brown sugar

Preparation

Heat oven to 375 degrees. Mist a 9- by 5-inch loaf pan or meatloaf pan with nonstick spray and set aside.

In large bowl, pour milk over oats and set aside to soak for 15 minutes. Drain oats, discarding excess milk (do not press on oats).

While oats are soaking, heat oil in a large, nonstick skillet. Add half the bag (6 ounces) of chard, and sauté for 5-6 minutes to wilt chard. (Save rest of chard for another use.) Remove pan from heat, mass chard on a cutting board and allow greens to cool slightly. When cool enough to handle, chop chard more finely.

To drained oats add the turkey, cilantro, onion, garlic, brown sugar, ginger, soy, fish sauce, sesame oil, salt, pepper, egg and chopped chard. Use an electric mixer on lowest speed to mix well (or use hands, whichever you prefer).

Spoon turkey into prepared pan. Bake, uncovered, for 30 minutes. Stir together sauce ingredients (hoisin, plum sauce and brown sugar), and spread sauce on top of loaf. Return to oven and bake for another 30 minutes (total baking time is 1 hour).

Remove from oven, let rest for 5 minutes, then slice and serve.

Makes 8 thick slices; serves 8.

Serve with roasted or mashed potatoes, steamed green beans and a green salad for an updated take on a traditional comfort meal.
