Stir-Fried Gingery Kale |

Two simple ingredients -- ginger and soy sauce -- enliven this kale side dish recipe
1 tablespoon safflower oil
2 tablespoons peeled, finely minced fresh ginger root
1 (1-pound) bag Cut `n Clean Kale Greens
2 tablespoons soy sauce
1/2 cup water
2 teaspoons toasted sesame seeds
In a medium skillet, heat the safflower oil. Saute the ginger root over medium heat, stirring occasionally, for 1 minute. Add the kale and increase heat to medium-high. Add soy sauce and water and stir-fry until the kale is wilted, but still slightly crunchy, about 3 minutes. Sprinkle with sesame seeds. Serve warm or cold.
Serves 4.
