Cut `n Clean Greens Country Greens Succotash |

A hearty side dish chock full of all kinds of vegetables -- including Country Greens
2 cups water
1 (1 pound) bag Cut `n Clean Country Greens
1 tablespoon butter
2 tablespoons oil
1/2 cup diced red onions
1 tablespoon chopped fresh garlic
1 cup whole kernel corn
1/2 cup fresh or frozen okra
1/2 teaspoon fresh thyme
1/3 teaspoon dried coriander
1/3 teaspoon dried red pepper
1 tablespoon seasoned salt
1 (8-ounce) can tomato sauce
1 cup low-salt chicken broth
1 cup fresh diced tomatoes
In a medium pot, bring 2 cups of water to a boil. Add Cut `n Clean Greens Country Greens blend and let simmer for 5 minutes. Drain greens in a colander and set greens aside.
In a large skillet, melt butter and oil. Add onions, garlic, corn, okra, fresh thyme, dried coriander, red pepper and seasoned salt. Saute for 5 minutes, until tender. Add 4 ounces of tomato sauce (reserve the rest for another use) and chicken broth and let simmer for 5 minutes. Add wilted greens and let cook for an additional 20 minutes, uncovered.
Gently fold fresh tomatoes into mixture. Add water as needed to thin out mixture. It should have a light gravy look but should not be soupy.
