Kale Salad with an Apple Cider Vinegarette

Serves: 1-2


1 small roma tomato, diced (or halved cherry tomatoes)

1/2 medium sized bunch of kale, de-stemmed and torn into pieces

1 teaspoon fresh lemon juice

1/4 teaspoon sea salt

1 teaspoon olive oil

1/2 avocado diced

a few super thin slices of red onion (more if you like)

1 teaspoon apple cider vinegar

1 teaspoon pine nuts (olives, sun-dried tomatoes, peppers, etc. would be most excellent as well)


Combine the sliced red onion with the apple cider vinegar in a small bowl and set aside. Toss kale bits into a large mixing bowl. Drizzle on the olive oil and sprinkle on the sea salt. Using your hands, mix the kale until it becomes soft. Add the avocado and mix with the kale. Add the onions, pine nuts, tomatoes and lemon juice. Mix one last time with your hands and then enjoy!
