Mediterranean IRONman Salad

Serves: 2-4


1 (8 ounce package) Cut ‘N Clean IRONman Spinach and Beet Greens Salad
1/8 Cup Lemon Juice
¼ Cup Olive Oil
1 ½ Teaspoon dill, chopped
1 Teaspoon Mint, chiffonade
Sea Salt and fresh ground pepper to taste
¼ Cup Red Onion, julienned
1 Cup Tomato, diced
1 Cup Cucumber, sliced
¼ Cup Kalamata Olives, pitted and sliced
½ Cup Red Bell Pepper, julienned
1 Ounce Feta Cheese, crumbled


In a small bowl, whisk together lemon juice, olive oil, dill, mint, sea salt and fresh ground pepper.

In a large salad bowl, add IRONman Spinach and Beet Greens Salad, toss with dressing and GarNIsh with red onion, tomato, cucumber, Kalamata olives, red bell pepper and feta cheese. Enjoy!
