Southern Mustard Greens

1 (1 pound) bag Cut 'N Clean Greens Flat Mustard
1 tablespoon canola oil
1 cup baked or smoked ham, diced
2 cloves garlic, minced
1 yellow onion, cut in small dice
2 tablespoons hot pepper vinegar
Salt and pepper to taste


Heat oil in a large skillet. Saute ham, garlic and onion over medium-high heat, for about 5 minutes, stirring often. Reduce heat to medium, add 3 cups water, mustard greens and vinegar. Boil gently, uncovered, until greens reach desired tenderness, about 10 minutes or slightly more. Taste and adjust seasonings if needed. Serve immediately.
