Spinach & Tomato Sauté
1 (10 ounce) bag Cut 'N Clean Greens Spinach
1 tablespoon butter
1/2 cup seeded and diced tomatoes
1/2 small red onion, diced
1/4 cup crumbled feta cheese
In a large skillet, heat butter until melted, add tomatoes and onion and cook until wilted, a couple of minutes. Add spinach and saute for 5 minutes. Remove from heat, season lightly with salt and pepper, and spinkle with crumbled feta.
Sweet tomatoes and tangy feta pair nicely with a Spinach saute recipe.
