Swiss Chard Salad with Rice

Serves: 4


1 cup rice, I prefer brown

3 ounces cold pressed olive oil

2 ounces soy sauce

Juice of 1/2 lemon

2 cloves garlic, minced

1 bunch of Swiss chard

1/4 cup chopped parsley

1 red bell pepper, chopped

1 tablespoon lemon juice


Mix 1 cup of rice, 3 ounces of cold pressed olive oil, 2 ounces of soy sauce, juice of 1/2 lemon, and 2 cloves of minced garlic in a bowl.

Then add 1 bunch of Swiss chard, 1/4 cup of chopped parsley, 1 chopped red bell pepper, and 1 tablespoon of lemon juice. Mix all together.

You can add in some diced tomato or chopped avocado.
