Veggies 'N Greens

Serves: 4

Ingredients:


1 bag of Cut 'N Clean Greens (any variety)

1 packet Cut 'N Clean Greens Seasoning

4 cups water

1 small red or yellow onion

2 tablespoons olive oil

1 tablespoon butter

1 cup corn

1 cup diced and seeded tomato


Preparation:

In a large pot, bring 4 cups water to a boil. Add 1 bag of Cut 'N Clean Greens (any variety), and boil greens -- 3 min. for Spinach, 8 min. for chard, Kale, mustard, turnip, or Euro Greens, 15 min. for collard or Country Greens. Drain greens in colander and set aside.
In the same pot, saute 1 small red or yellow onion, chopped, in 2 tablespoons olive oil.
Add 1 tablespoon butter and 1 packet Cut 'N Clean Greens Seasoning; cook and stir for 30-45 seconds.
Add 1 cup corn (drained if using canned, thawed if using frozen) and 1 cup diced, fresh, seeded tomato (or use a total of 2 cups of either single vegetable).
Return greens to pot, fold in, and heat through.
